Century Eggs

Century eggs, also known as 1000-year-old eggs, preserved eggs, millennium eggs and pidan, is a kind of traditional Chinese food. It is said that the century egg has over five centuries of history behind its production. The discovery of century eggs can date back to the Ming Dynasty (1368 – 1644).
Century eggs are made by coating duck or chicken eggs in a clay-like mixture of wood ash, quicklime, tea, earth, and salt. The mixture hardens around eggs and results in the curing and creation of century eggs instead of spoiled eggs. Read the rest of this entry »
